Let me give you an example.

About 35 years ago, while growing up in Southeastern Arizona, my friends and I used to visit this little restaurant off main street. It was a home converted into a restaurant run by two old ladies. They made the best tacos in the world! They were cooked on a regular stove and wrapped in wax paper. I could literally drain the grease from them. They were topped with white cheese, lettuce, and tomato. And were they ever good. I can remember getting those tacos by the dozen and sharing them with a friend or two. The place was very popular because the food was authentic and good.

I know Phoenix has places like that. I would like to catalog them.
